So I have this new job at this place in East Aurora, and it’s
called Leo’s Pizzeria, and it’s like really cool, so I’ll just write this
choice blog about that. First of all, it’s a solid 25 minute drive to this
place, but that’s not really a problem, because I am in love with my new car. I
would drive this thing all day if I could. However the long drive is most
likely going to become a problem when I run out of the full gas tank that came
with the car when I got it. Anyways, I get there and the place is absolutely
awesome on the inside. It’s a sweet looking sports par/pizzeria, with TVs
everywhere and signed jerseys hanging in cases on every wall. The only problem
with this is that I can’t really ever go in that room, because I work in the
back in the kitchen, which is not as nice as the bar and or sitting area.
Anyways, I work from 4 to 8, and it’s a pretty decent shift to say the least.
First, I form the pizza dough on the trays. Next I gladiate the dough to aerate
it. Then I place my fingers between the dough and the tray, and stretch the
dough out. After that I pinch it near the edge to create the crust. After the
cooler is full of stretched doughs, I take a few out and begin to prepare them
so I am not stressed out when the rush comes and approximately 5:30 pm. I start
by filling a ladle with this sweet sauce, that I absolutely love the taste of,
and then I pour it on the dough and shake the tray to distribute it evenly.
Then I fill the dough with cheese and wait for specific orders to come in!
